what color setting to use

After some hesitation I would say: try the vivid red. Because red colours dissapear quickly when going under water perhaps boosting what is left might help although a good red filter or a so called magic filter will probably give a better result

I would use the underwater setting personally and then use software to adjust hue appropriately.
